In an effort to keep the "Italian fresh and beautiful food" momentum going I was searching for a way to prepare the last of the fresh kale from my flowerpot garden. I just happened to stumble upon "The Kale Project; a movement to bring the healthiest green vegetable to Paris." What caught my attention was their raw kale method of massaging the greens to make them tender enough to eat without cooking. Massage my greens?!! Oh mais oui!!
The indredients are simply:
(All of mine fresh from the garden!)
Juice of 1/2 lemon
After prepping the kale you place it in a large bowl with olive oil, lemon, salt and pepper and massage it with your hands for about one minute; add the cut radishes and cut tomatoes. Honestly, you will not believe how delicious this is....Check out the link to
