Potato Salad ~ Light and Fresh

Like most cooks, I have my go-to potato salad recipe. It's the one Michael loves so I tend to get into the habit of whipping up the family favorite and ignoring all others...until...I spotted this fresh and wonderful Tomato & Mozzarella Potato Salad with Lemon-Buttermilk Dressing from the kitchn.
The reason for my potato salad break out? I had all the ingredients on hand and am determined to use what is in season and in house. Which, as it turned out was lucky for me!
